The mixes are hydrated to 75% of water coming directly from the natural sources of the Gran Sasso group. This allows the product to have a more regular alveolar structure and a short and pleasant chewiness.
In addition, the high hydration of the dough allows the finished cooked product to increase the life on the shelf, maintaining a lively appearance even after several hours from cooking. In this way, both pizzas and focaccia can also be enjoyed cold, or if they are heated, they regenerate, returning to be crunchy outside and soft inside.
